I was born in China but my wife was born in Taiwan instead. Does my priority date becomes current (which is the status for Taiwan) because of the cross-chargeability?

Yes, under the rule of cross-chargeability, you can benefit from your wife's current priority date and file the I-485 for adjustment of status either immediately after your I-140 has been approved or while it is pending.
